Chunky Sweets
| 1/2 cup | Liquid honey or frozen, unsweetened, undiluted pineapple juice concentrate |
| 1/2 cup | Blended butter, margarine or oil |
| 1/2 tsp | Almond extract |
| 1 | Egg or egg subsititute |
| 1 1/2 cup | Whole wheat or wheat-free flour |
| 1/2 tsp | Baking powder |
| 1/2 tsp | Baking powder |
| 1/2 cup | Chopped dates |
| 1 cup | unsweetened coconut |
| 1/2 cup | naturally candied pineapple |
| 1/2 cup | trail mix |
Directions: Preheat oven to 350 degrees. Beat first 4 ingredients. In another bowl sift flour (to make gluten free use flour mix from The Gluten Free Companion) , soda, and baking powder. Add to first mixture. Stir in remaining ingredients one at a time. Scoop large mounds of batter onto a non-stick pan. Bake 12-15 minutes or until golden.
